VEGETARIAN 10-MINUTE EGG FRIED RICE


This is perfect quick, delicious, and easy recipe to make at lunch when you have less than half an hour to cook and eat. Use simple ingredients you find in your fridge, add a lot of flavor, and enjoy a nutritious and satisfying meal to get you through the rest of the day.

Ingredients

  • 2 Tbsp olive oil

  • ½ medium onion, chopped

  • 1 large carrot, chopped or thinly sliced

  • 1 celery stalk, chopped or thinly sliced

  • 2 cloves chopped garlic

  • 2 C cooked rice

  • 2 eggs

  • ¼ C soy sauce

  • Juice of half a lemon

  • 2 Tbsp sesame seeds

  • Black pepper to taste


Instructions

  1. Heat oil until a small piece of onion starts to sizzle.

  2. Sautee onion until transparent.

  3. Add garlic, celery and carrot and sauté until veggies start to get soft, about 2 minutes.

  4. Add rice and mix with veggies.

  5. Add eggs and cook until soft, then mix with rice and veggies.

  6. Add soy sauce and lemon juice and mix with rice and veggies.

  7. Add black pepper and sesame seeds and mix with rice and veggies.

  8. Cook another 2 minutes to let flavors merge.
