This one of my top 3 favorite vegan spicy lentil soup recipes. It is a complete hearty and flavorful meal in one bowl. The flavors of the vegetables, the texture of the lentils, the spice from the jalapeno and the smokiness of the paprika become a celebration in your mouth.
When you plate this simple, quick, and spicy lentil soup in a fancy, beautiful dish, it becomes a vegan, elegant dish you can serve to any guest, vegan or not, for any occasion, formal or not.

Ingredients
1 C chopped tomatoes (any kind of tomatoes)
½ C chopped onion (any kind of onion)
4 garlic cloves
1 jalapeño chile
2 Tbsp olive oil
1 chopped bell pepper (any color)
1 C cubed potato
1 C sliced carrot (any color)
2 C rinsed lentils
Paprika to taste
Salt to taste
Black pepper to taste
8 C water
Instructions
Blend tomatoes, onion, garlic and jalapeno chili
Heat oil until a small piece of bell pepper sizzles
Add tomato sauce to hot oil and sauté for 1 minute
Add bell pepper, potatoes, and carrots and coat well with sautéed tomato sauce
Add lentils mix with rest vegetables
Add salt, pepper and paprika to lentils and vegetables and sauté for one minute
Add water and stir to mix with lentils and vegetables
Bring soup to a boil and then lower to a simmer for 30 minutes
Serve hot and enjoy by itself or with tortillas or bread
