THELMA'S LEMON GUACAMOLE


Guacamole is as Mexican as tortillas and beans. Good guacamole is usually spicy, but there are 1001 ways to make a good guacamole. The recipe below reminds me of a rare couple of years when one of my sisters, one of my nieces, and I lived close enough to each other to spend many Wednesday evenings together. We always had guacamole and drank tequila and talked about everything that was happening in our life and shared lots and lots of laughs, especially as the tequila started doing its thing. My niece especially looked forward to the guacamole every week and I still remember those gatherings every time I have guacamole. Ingredients

  • 2 ripe avocados

  • Juice of 2 lemons

  • 1 ripe tomato

  • 1 jalapeño chili

  • ½ medium white onion

  • 1 tsp salt

  • 1 tsp black pepper

  • 1 tsp oregano

  • 1 tsp red pepper flakes

  • 1 tsp olive oil

  • Salt to taste



Instructions

  1. Slice avocados around the pit and separate the two halves. Remove the pit carefully. Use a spoon to remove the pulp of the avocado from shell into a large bowl. Use the spoon to scoop in light layers instead of mashing the avocado in the bowl.

  2. Add the lemon juice to the avocado and mix a little to avoid letting the avocado turn black.

  3. Chop tomato, onion and jalapeño in very small pieces and add to the bowl and mix.

  4. Add olive oil, salt and black pepper to bowl and mix. Taste and add more salt if needed.

  5. Add oregano and red pepper flakes to bowl and let these be showcased on top!

  6. Serve with tortilla chips and enjoy!
