RAJAS CON PAPAS


This is the best recipe for Rajas con Papas, una receta deliciosa! This recipe of simple sliced peppers and potatoes is a healthy, flavorful, and easy dish to prepare. It can be the center of a simple meal or a side dish to a more formal meal. It is also a great dish to serve when you have a mix of vegetarian and non-vegetarian friends hungry for a hearty dish with lots of flavor. With or without cheese, this dish is sure to please everyone around your table.


I add banana peppers for a little spice, you can substitute with jalapeno or serrano if you want a lot of heat or remove from the recipe if you want it very mild.

Ingredients

  • 2 C cubed potatoes, about ½” cubes

  • 3 poblano chiles, sliced

  • 3 chiles gueros (banana peppers), sliced

  • 1 onion, sliced

  • 2 large garlic cloves, thinly sliced

  • 2 Tbsp olive oil

  • Salt to taste

  • Black pepper to taste

  • ½ C cheese, optional


Instructions

  1. Heat olive oil.

  2. Add potatoes and coat with oil to avoid them getting stuck to the bottom of your pan.

  3. Add onion and garlic, mix well with potatoes and oil.

  4. Add chile poblano and banana peppers, mix well with rest of ingredients.

  5. Add salt and pepper to taste and mix well with all ingredients.

  6. Cover and simmer for 15 minutes, stirring a few times in between.

  7. Add cheese and cover for 5 more minutes. Let it melt on top of all the vegetables. You can serve the cheese on the side or leave it out if you want to make this a vegan dish.
