Blueberry Pancakes


My pancakes are legendary with all that have had breakfast in my kitchen. From the Netherlands to Big Bear, family and friends gather around the kitchen with enthusiasm when they know I am making blueberry pancakes for breakfast.


These pancakes are sweet, fluffy, delicious, and super simple to make!

Ingredients

• 2 eggs

• 1 C half & half

• Tbsp vegetable oil

• 1 C flour

• ¼ C table sugar

• 1 tsp baking powder

• ½ C fresh blueberries


Instructions

1. In a medium mixing bowl, whisk eggs until fluffy.

2. Add half & half and vegetable oil, mix well with eggs.

3. Sift into egg mixture, sugar, flour and baking powder. Mix well.

4. Fold blueberries into batter, carefully.

5. Heat non-stick pan to medium heat.

6. Ladle 1/10th of the batter at a time. Wait for bubbles to form around the pancake before you flip it. It can take up to 3 minutes, depending on your stove.

7. Flip pancake and cook for another 1-2 minutes, depending on thickness.
